Lumpiang Sariwa (Rolled Pancake)

Lumpiang Sariwa (Rolled Pancake) Recipes

Ingredients :
2 cloves garlic (chopped)
1 onion (thinly sliced)
2 tbsp cooking oil
250g boiled beef (diced)
200g medium shrimps (chopped)
80g cooked chicken (chopped)
300g carrots (julienned)
60g long beans (thinly sliced)
150g cabbage (shredded)
18-20 pancakes
lettuce leaves
a little water
Brown Sauce Ingredients:
80g sugar
1 tbsp cornflour
250ml chicken stock
2 tbsp sweet soy sauce
1 clove garlic (finely chopped)

Method :
Saute onion and garlic in oil until tender. Add beef, shrimps and chicken. Simmer uncovered for 5 minutes, stirring frequently. Add carrots, long beans and water. Cook for another 5 minutes. Add cabbage and salt, stir until cabbage is done. When all the vegetables are cooked, remove to cool. Place a pancake on a platter. Top with a lettuce leaf. Spoon cooled vegetable mixture onto it. Roll pancake up, folding in both sides. Serve immediately with brown sauce.
To prepare brown sauce - Mix sugar and cornflour. Stir in stock and soy sauce. Keep stirring till mixture boils, then lower heat. Add garlic and stir till sauce thickens.
