Fish with Three Flavored Sauce Recipes

Ingredients :
3 ikan selar
1/2 cm turmeric, salt to taste (pounded)
oil for frying
4 shallots (coarsely sliced)
2 tomatoes (quartered)
2 tsp dried shrimp paste (preferably granules)
1 tbsp fish sauce
1/2 tbsp sugar
1/2 tbsp lime juice
4-5 cili padi / bird's eye (bruised)

Method :
Rub the fish with turmeric mixture. Set aside for 20 minutes. Heat oil, then fry the fish till crisp and done. Place in a serving dish. Remove all but 3 tbsp oil. Stir-fry shallots and tomatoes for 2-3 minutes. Put in dried shrimp paste, fish sauce, sugar, lime juice and cili padi. Stir over medium heat till the oil floats. Pour sauce onto fish and serve.
